Champagne Delamotte Brut N/V
The wine is aged for 30-36 months on the lees and no oak is used. There is no particular yeast selection and a light dosage of sugar is added. This is a fresh, fruity elegant champagne with hints of ginger, pear with good mineralty and a slight touch of toast. $38
It went very well with the smoked salmon, gravlax, and Kerrygold butter with pumpernickel bread we had for a late lunch.
